Blue Stilton cheese is quintessentially English, it is though of as the King of British cheeses, and I just love it. I avoid eating Stilton as a snack with crackers too much these days due to the high fat content, but I do love to use it in cooking and more sparingly in several recipes including this lovely tasty Blue Cheese and Bacon Salad. You could use any hard blue veined cheese for this recipe but for me it has to be a lovely creamy blue Stilton, it gives the salad such a wonderful taste. What I love about this salad – apart from the glorious taste – is the wonderful difference in textures, with the creamy cheese, crispy bacon and delicious crusty croutons. This salad is NOT one for including in a low fat diet but it is truly delicious and well worth the odd treat. It makes a delicious light lunch recipe with some good crusty bread or as an appetizer or starter.
BLUE CHEESE AND BACON SALAD
Serves four as a main course or 6 as an appetizer
300g smoked back bacon
75ml single cream
50g salted butter
100g Stilton cheese
4 thick slices bread, cut into 1 cm (½ inch) cubes
4 tablespoon light mayonnaise
2 cloves garlic, crushed
Freshly ground black pepper
1 large bag mixed salad leaves
2 large, firm tomatoes, diced
½ cucumber, diced
1 red onion, thinly sliced
Grill the bacon until very crisp, drain on absorbent kitchen paper.
2. In a small frying pan (skillet) melt the butter, add the crushed garlic and bread cubes and cook carefully for about 3-4 minutes until crisp and golden brown. Drain on absorbent paper.
3. Blend the mayonnaise and half the crumbled cheese together, stir in cream and black pepper and blend well.
4. Gently mix together the leaves, tomato, cucumber, onions, remaining Stilton cut into cubes, bacon and croutons together.
5. Place in a serving bowl, add the cheesy dressing, mix gently while making sure that all the salad leaves are well coated.
